Health Post

all right... so i never really made a new year's resolution for this coming year. I've decided that i am going to try to begin logging what i eat on my blog. i think that it might help to motivate me to be more careful about my allergies and my weight and my health.

it gets really hard during the school year to actually have time to care about what i am eating, but since alexa and aaron made me such a nice allergy-friendly cook book, i really have no excuse to not make what i need to eat.

i enjoy cooking, and it is very easy for me to make things from scratch and avoid random added things that will make me feel sick.

i had been journaling what i was eating a little bit last semester, but it was in a written book that only i could see, so i was a bit shameless about it. Maybe if i am putting it up here for people i care about to see, i won't be able to run away from eating poorly.

okay.... so for today: geez... the hardest part is actually remembering what i ate... that probably isn't a good sign that i was being health-conscious....

-coffee with cream prepared by an interesting ham radio fellow named Tex -- he's a retired Texas cop and very serious about his radios.

-Einstein Bro's turkey sausage, cheddar cheese, and egg on a six cheese bagel ^_^ so bad... but sooooo good.

-Applebee's spinach and artichoke dip with tortilla chips, boneless buffalo ranch wings with ranch/blue cheese, chocolate mousse dessert shooter

-a thin but long slice of lemon wet cake *YUM* omg i put it in the fridge overnight, and it got even more lemony and better-tasting than it already was.

-Applebee's spinach and artichoke dip with tortilla chips, boneless buffalo wings with ranch, steak quesadilla/roll up things

-drinks for the day were creamed coffee, milk, and water

tonight, i also prepared some baked polenta, *or as david calls it, baked placenta... eww.. gross*

it is cornmeal mixed with water, oil, and a tiny bit of salt -- cooked on the stovetop until creamy and then flattened on a pan and baked until it is hardened on the outside but still creamy on the inside.

it is good with chili and the recipe also says that it is very good with sauteed mushrooms... and it supposedly makes a delicious dessert if you drizzle syrup on top.

i haven't really eaten any of the polenta tonight -- i made it more for tomorrow or monday. i can just heat it up in the oven again when i'm ready for it and it will get nice and crispy... mmmm.... delicious...

I haven't gotten back into blogging yet but you are motivating me. At least each day is getting a little better for me and eating so I'll get back to it soon. It certainly made me think twice before I ate anything I'd feel guilty putting on my blog :o) Love you Mom
